So when the oven has given me, instead of candy soft, round and inviting, the disgusting pancakes dry and hard, I have sworn eternal revenge.
It took three tries, but eventually the result is quite similar to what I wanted. (Eh, I'm pleased difficult).
Serves twenty cakes
250 g blanched almonds (or almond flour 250 g ready)
250 g caster sugar
candied cherries, twenty
an album ( use organic eggs!)
Blend with the mixer the almonds until they get a meal rather fine. Please add sugar and blend some more 'till the two ingredients are blended. Add the egg, and mix until the dough is very hard.
Form small balls and place them on a baking sheet covered with buttered parchment paper. Depress the center of each ball a candied cherry.
I, following the advice of the lovely (and talented!) Julia Amaradolcezza , I used the convection mode and put the balls in the fridge a little dell'infornata first, to harden a little while.
I have formed into balls a little larger 'more of the nuts and I cooked at 180 degrees for 11 minutes.
